Choc-Chip Orange Cupcake

Ingredients:
8 oz butter ( Kim used 227gm)
6 oz sugar ( Kim used 160g castor sugar )
280gm plain flour + 2 tsp baking powder ( Kim used Self Raising Flour)
4 eggs ( Kim used small eggs )
5 1/2 Tablespoons orange juice
4 teaspoon orange rind
100gm choc-chips ( Kim used raisins 1 packet )
Pinch of salt ( Kim omitted )

Method:
Sift the plain flour with baking powder and salt, set aside.
Cream the butter, sugar and orange rind till light, fluffy and creamy.
Add in eggas one at a time, mix well.
Fold in sifted flour alternatively with the orange juice.
Add in the choc-chips, mix thoroughly, scraping from the
bottom and sides of the mixing bowl.
Line a patty tin with cupcake liners and spoon over tbe batter.
Bake in a preheated oven @ 180 deg C and bake for about
20 - 25 minutes, or till golden brown.
Test with a skewer till it comes out clean.
Remove from oven and let cool in pan for about 10 minutes, before removing from pan and let cool completely on a wire rack.
Serve.
